No longer will I put up with the same meal every day. While I am a creature of habit, I strive for change once in a while. A salad for lunch and chicken for dinner is quickly boring my belly.
I represent the norm, and I know that if I’m struggling with dorm food, chances are good that most other students are too. It’s time to get creative, healthy and crafty — all on a budget.
Let’s start with breakfast. Sometimes I’m too lazy to venture down and grab food before class, so I use what I have in my fridge to whip up some delicious and healthy meals.
1. Yogurt parfait
With three easy ingredients, it doesn’t take the cooking skills of Julia Child to whip up a perfect parfait. In a bowl, just mix together your favorite yogurt and perhaps some blueberries and strawberries. Top it off with a handful of granola and wash it down with a cup of milk. This healthy breakfast can be enjoyed on the go too. If you have a plastic cup, use it as your bowl. Once you fill it up, wrap the top with plastic wrap and take your treat to class with you.
2. Scrambled eggs with cheese
• 2 eggs or egg white beaters
By cracking two eggs into a glass bowl and sprinkling it with cheese, in two minutes you can make yourself a meal that will fill you up. Pop the bowl in the microwave for about two minutes. Take it out, stir it up and see if the eggs have completely cooked. You may have to stick it back in for another minute if the eggs are still runny. Eggs are an easy, cheap and extremely healthy way to start out a long day of classes. If you’re a meat lover like I am, try throwing in a few pieces of bacon to give your eggs some zest.
3. Fruit salad… (yummy, yummy)
• Any type of fruit your heart desires
This is by far the easiest and most creative breakfast you can make. Throw together any fruit you can find in your fridge or dining hall and make a fruit salad. I usually pop mine in a to-go container and eat on the way to early classes. If you don’t eat it all, you can easily stick it right back in the fridge to use as a snack later in the day.
Cliche as it may be, breakfast truly is the most important meal of the day. Breakfast keeps you energized and fresh so you can do your best to stay motivated. When you have your hearty helping, you’ll be able to complete your classes and homework with full stamina.
